This MIND Diet-inspired recipe comes from Memory and Aging Program Outreach Coordinator, Lorrance Saraiva . Chicken is a heart- and brain-healthy lean protein and is a great source of vitamin B. Combined with the olive oil and cinnamon, this recipe is packed with brain healthy nutrients and lots of great flavor!
Ingredients:
- 1 package of chicken tenderloins
- 1/2 cup apple cider vinegar
- 1/4 cup olive oil
- 1 cup garlic and herb marinade
- 1/2 cup Italian dressing
- 1/2 tsp cinnamon
- 1 tsp paprika
- Black pepper to taste
Instructions:
- Combine the garlic and herb marinade, apple cider vinegar and Italian dressing, add chicken to the mixture and marinate in refrigerator overnight.
- Remove chicken from marinade.
- Combine the cinnamon, paprika and black pepper then sprinkle onto both sides of the chicken.
- Grill or bake chicken to an internal temperature of 165 degrees.
- Once 165 degrees is reached broil chicken to a golden brown.
