MIND Diet Brain-Healthy Bites: Avocado Almond Oatmeal

AtheneLeeThis MIND Diet-inspired recipe comes from Memory and Aging Program Neuropsychologist Athene Lee, PhD. Oats are full of vitamins B and E, making it "the grain for the brain". The olive oil and almonds add additional brain healthy choices to complete this dish.

 

 

Ingredients:

  • 1/3 cup quick cook oatmeal
  • 1/2 of an avocado, sliced
  • handful of almonds, toasted whole, crushed or sliced
  • 1 organic egg
  • 1 tbsp condensed milk
  • 2 cups cold water
  • olive oil, salt and pepper to taste

Instructions: 

  1. Add oatmeal to the 2 cups of cold water, sprinkle with salt and cook for 1 - 2 minutes.
  2. Add egg to the hot oatmeal, cook for 1 minute then stir in. 
  3. Add condensed milk to a mixing bowl and spoon cooked oatmeal in.
  4. Top with avocado slices and almonds.
  5. Drizzle with olive oil, add salt and pepper to taste and enjoy!
