This MIND Diet-inspired recipe comes from Memory and Aging Program Neuropsychologist Athene Lee, PhD. Oats are full of vitamins B and E, making it "the grain for the brain". The olive oil and almonds add additional brain healthy choices to complete this dish.
Ingredients:
- 1/3 cup quick cook oatmeal
- 1/2 of an avocado, sliced
- handful of almonds, toasted whole, crushed or sliced
- 1 organic egg
- 1 tbsp condensed milk
- 2 cups cold water
- olive oil, salt and pepper to taste
Instructions:
- Add oatmeal to the 2 cups of cold water, sprinkle with salt and cook for 1 - 2 minutes.
- Add egg to the hot oatmeal, cook for 1 minute then stir in.
- Add condensed milk to a mixing bowl and spoon cooked oatmeal in.
- Top with avocado slices and almonds.
- Drizzle with olive oil, add salt and pepper to taste and enjoy!
